The last couple weeks have been super busy! Kevin went to scout camp, I changed jobs, Kevin graduated from college, and we went camping! With my job change and Kevin not worrying about homework, I have enjoyed having more time to spend doing the things I love - with the one's I love!

 

 

 

HOMEMADE CARNE ASADA TACOS

As promised, THIS is what can be made from leftover roast! Do not try to deny how delicious these tacos look! Juicy shredded beef, cilantro, and a squeeze of lime! This is a recipe we will do again and again at our house. Very simple, yet a lot of flavor! Quick, easy, and delicious! Enjoy!


Shredded Beef (leftover roast, as seen in previous post)
Cilantro
Salsa (homemade or store bought)
Fresh Lime
Corn Tortillas

  1. Use leftover roast meat or cook meat and shred. Season as desired.
  2. Place small amount of meat on 2 stacked corn tortillas.
  3. Add salsa and cilantro leaves.
  4. Cut fresh lime in half and add a small squeeze of lime juice (usually one half lime per person lasts as many tacos as they want).
  5. Pick up that taco and ENJOY!

The Best Crock-Pot Roast!

This is a fool-proof, no knife, fall apart, melt in your mouth roast! It is literally THAT good! I have never been a fan of roasts. When I normally think roast, I think: bland, DRY, and no flavor! This recipe is 150% different! As a working wife, I love easy recipes that please all - and this one is at the top of my list. Enjoy!


1 packet Ranch Dressing Mix
1 packet Brown Gravy Mix
1 C. Water
1/2 C. Butter (salted or unsalted)
Roast (any cut of roast you prefer)
Vegetables - Potatoes, Carrots, Onions, etc.

  1. Thaw roast over night. In the morning, place roast in crock-pot.(Browning the roast on the stove first can be done before placing into crock-pot.)
  2. Add 1/2 to 1 cup of water in the bottom.
  3. Evenly sprinkle Ranch Dressing Mix packet and Brown Gravy Mix packets over top of roast.
  4. Cut butter into slices or cubes and place sporadically on top of roast. 
  5. Place lid on crock-pot and cook on low for 6-8 hours. (let's be honest, I've cooked it for 12 hours once!)
  6. Two hours before roast is done, chop any vegetables desired and place in crock pot (on top of roast) until vegetables are tender.

CHICKEN AND BACON BBQ PIZZA

The title says it all. It has BACON, so it must be good! This recipe is sure to please even the pickiest of eaters! This has been one of our favorite recipes lately! It's not too hard to understand why... Who doesn't LOVE pizza? Great for that leftover chicken in the fridge! This is my go-to dough recipe for a crust that turns out perfect every time!
 

 
 
CHICKEN AND BACON BBQ PIZZA
Prep Time: 30 minutes
Cook Time: 15-20 Minutes
Serves: 4-6
Oven Temp: 400 F
 
DOUGH:
1 T. Yeast
1 T. Sugar
1 C. Hot Tap Water
2 T. Oil
1 tsp. Salt
2 1/2 C. Flour
 
TOPPINGS:
BBQ Sauce
3-4 C. Mozzarella Cheese
Cooked Bacon Pieces
Cooked Chicken, Shredded
Minced Onions
Other Optional Toppings, olives, green peppers, etc.
 
  1. Combine yeast, sugar, and hot tap water in mixing bowl. Give a small stir and let rise for about 5-10 minutes.
  2. While waiting for yeast to rise, preheat the oven, and combine flour and salt in separate bowl.
  3. Add oil to dissolved yeast, next adding in flour and salt mixture.
  4. Mix with dough hook on 1-2 speed for about 5 minutes or until combined.
  5. When combined, sprinkle small amount of flour on dough and kneed about ten times.
  6. Place back in bowl and let sit for about 5 minutes. 
  7. Spray pan with cooking spray. Spread dough on pan evenly with floured hands.
  8. Spread desired amount of BBQ sauce on dough. Add toppings.
  9. Cook at 400 degrees for 15-20 minutes.
